A pioneer of BajaMed cuisine, he has brought Northern Mexican cuisine to the international stage. His philosophy unites the sea, the desert and the Mediterranean in a single culinary narrative. Its presence in this edition marks a tribute to the origin of this gastronomic language.
Juan Pablo López Marín: the host of El Mirador
Executive chef of El Mirador Ocean View Restaurant, Juan Pablo López Marín is the host of this edition. Its cuisine combines technical precision and aesthetic sensitivity, integrating products from the region, local fisheries, vegetables from the Todos Santos oasis and edible flowers in dishes that dialogue with the landscape.
Alberto Collarte: the global vision of a globetrotter
Originally from Chile, Alberto Collarte has toured American and European cuisines, developing an identity that unites tradition and avant-garde. His experience in fine dining restaurants in Santiago, Mexico City and the Guadalupe Valley has allowed him to build a free and contemporary style, focused on the product and the narrative behind each ingredient.
Carlos Valdéz: the power of the sea and the land of Paca
Recognized for his work in La Paz at the helm of Tatanka Baja Fish & Steakhouse and Mozzarella, Carlos Valdéz is one of the driving forces behind the new Baja California cuisine. His proposal celebrates the balance between sea and land, with an execution that respects the product and a clean aesthetic that reflects the spirit of the peninsula.
